Simon’s Choice – BBQ Strawberries
- Strawberries 6-8 per person
- Brown Sugar
- Cinnamon Sticks (optional)
- Baking Foil
First cut some foil into individual 6” squares enough for each person next prep 6-8 strawberries for each person; hulling them, and cutting them into bite-sizes. Place the strawberries into the centre of the foil, sprinkle with a little sugar to taste and fold the foil up a little then add a shot of Cointreau to the mix before crimping the foil up at the top like a filo pasty parcel. It’s also good if you add a cinnamon stick to each parcel.
Simply place the parcels on your BBQ after your meal and leave to slowly cook for fifteen to twenty minutes and let all of the juices mix with the alcohol and sugar. Keeps an eye on them they should be just about done when the liquid is boiling. However if you leave them in a little longer the strawberries will just be a little softer.
Take off the BBQ and pour into bowls and serve with clotted cream and cookies, yum!
Kate’s Choice – Stawberries with Balsamic
- Punnet of Strawberries
- 1-2 tsp Balsamic Vinegar
In a bowl prepare a punnet of strawberries with a small knife to remove the stalks and centres, and then slice into quarters. Sprinkle a table spoon of sugar over them and then add 1-2 tea spoons of balsamic vinegar. Mix together and leave in the fridge for 30 minutes to get the juices going, then simple serve over meringues with cream or however you like your strawberries.
